Homemade muesli with yoghurt and stewed fruit
For insert on how to boost the immune systom, dietician Leonore Ward suggested this breakfast which is rich in vitamins and antioxidants to give the body strength and help it fight winter colds and flu. The recipe for the muesli and also the fruit makes more than one serving. Make it over the weekend and enjoy a healthy breakfast all week.

(Serves 1)

180 ml low fat Bulgarian yoghurt
½ c stewed fruit
2 t homemade muesli

Place fruit in a small bowl or glass, spoon the yoghurt over and sprinkle with the muesli.

Stewed fruit
3 green tea bags
3¼ c boiling water
2 t sugar
2 t fresh finely grated lemon zest
3 c mixed dried fruit

Allow the tea to draw in the hot water for 3-5 minutes. Remove the tea bags. Stir in the sugar and lemon zest. Cut any larger pieces of fruit in smaller pieces and place in the pot with the tea mixture and cover. Simmer over low heat until the fruit is soft and swollen and the liquid is syrupy. Place in a glass bowl and allow to cool. Cover and refrigerate until needed.

TIP: the fruit can be covered and stored in the fridge for 4 days.

Homemade muesli
4 c oats
2 c all bran flakes
2 c roughly chopped mixed nuts

Mix all ingredients and store in an airtight container. Muesli can be stored for up to 2 months.
